The braising of meat and slow cooking with wine is most predominant in the Piedmont region of Italy. Often, the most common forms of braised meat are taken from a leg of veal or beef.
Over the years, Italian braised short ribs have evolved on this side of the world. Short ribs of beef are more readily found here rendering this popular dish and Italian-American favorite. In Italy and in the US, braising in Barolo wine is most common, but this dish can be made with any hearty red wine and recipes for this wonderful meal are abundant.
